Recipe: Grilled Vegan Steak with cabbage and apple salad

Serves 4


  • 400g or 2 large pcs VMAS Veg Hainan Mock Chicken (thawed)
  • 1 tbsp wholegrain mustard
  • 1 tbsp maple syrup (or vegan honey substitute)
  • olive oil spray
  • Salad:
  • 2 small red skinned apples, cut into think wedges
  • 400g green cabbage, finely shredded
  • 2 tbsp coconut yoghurt
  • 1tbsp unsweetened apple juice
  • 2 tsp Dijon mustard
  • Cracked pepper, to season


  1. Cut each pc of mock chicken into quarters.
  2. Combine the mustard and maple syrup in a small bowl. Brush over both sides of the mock chicken. Cover and refrigerate while making salad.
  3. To make salad, place apples and cabbage in a large bowl. Whisk coconut yoghurt, apple juice, mustard and pepper in a small bowl. Add to salad and toss well. Cover and refrigerate.
  4. Preheat a grill pan or large, non stick frying pan over medium heat. Spray lightly with cooking oil to grease. Add marinated mock chicken and cook for 3-5 mins on each side or until brown.
  5. Serve grilled mock chicken with salad.
