Roasted Potato Vegan Salad

  • 2 slices Lamyong Vegetarian Soy Fillets
  • 3 medium potatoes (peeled and cut into quarters)
  • 5 baby tomatoes (cut in halves)
  • 1 small zucchini (cut into same size as potatoes)
  • 100g spinach
  • 10ml olive oil
  • 1 baby parsley (for garnish)
  • 3 dried bay leaves
  • Salt
  • Pepper


  1. Combine soy sauce and chilli sauce in a bowl.
  2. Cook hokkien noodles according to packet instructions. Drain, then set aside and
    keep warm.
  3. Heat 1½ tablespoon of cooking oil in a wok or large fry pan over high heat. When
    smoking, stir fry Lamyong Vegetarian Crispy Soy Slices, then stir fry for 2-3 minutes
    until golden. Remove and set aside. Wipe wok clean with paper towel.
  4. Add combined sauces to wok and bring to the boil over high heat. Allow bubbling for
    1 minute, then set sauces aside. Wipe wok clean with paper towel.
  5. Heat the remaining oil in wok over high heat. Stir-fry the ginger, Chinese broccoli and
    capsicums for 1 minute. Return Lamyong Vegetarian Crispy Soy Slices and cooked
